You may have had tempura abroad or even in Japan, but Tempura Fukamachi will make you reevaluate your experience. The preparation and care put in these tempura dishes are like comparing apples and oranges.
This restaurant is on the pricey side, but it is very well worth the price given how masterful this experienced chef is. When you think of tempura, you probably think of heavy food, but not when it's done right! The chef serves delicately fried batter which preserves the taste of the ingredients.
What sets Tempura Fukamachi apart from other tempura restaurants is the way the tempura is fried, the batter used and what it is fried in. The batter is thin and very light in order to give the leading role to the delicious and fresh ingredients. Second, it is fried in two different fryers set at different temperatures, one for vegetables and the other for seafood. Lastly, it is fried in sesame oil which gives it its distinct and incredible flavour.
When you order the tempura course, these are the seasonings served to highlight the tempura's delicate flavour.
This dish is Tempura Fukamachi's claim to fame; it is uni wrapped in oba dipped in their signature light batter and delicately fried. This is the embodiment of beautiful and refined Japanese cuisine.
Once you bite into it, the mix of textures is like a celebration for your palate. The cruncy texture of the batter mixed with the soft uni is delicious on its own, then the oba leaf gives it that extra punch.
If you have the chance to sit at a counter, you will see the chef in action. Each gesture is delicate and calculated and took years to master.
